Ksisters x Bruno Zoom Virtual Event

What is ⁠Radish Kimchi (Kkakdugi 깍두기)?

Radish kimchi is a kimchi made out of Korean radishes or mu (무) and its Korean name is Kkakdugi (깍두기).  Its name also originates from kkakduk sseolgi (깍둑설기) in Korean, which actually describes the motion of cutting food in cubes. Side note: Korean radishes have a strong flavour, dense flesh and crunchy texture.

Kkakdugi or Radish Kimchi is made by marinating cubed and salted radishes with pureed mixture of red chilli, scallions, pear, and onion, fish sauce, chilli powder, plum syrup, and saltAfter the mix together, it is then traditionally stored in a Jangdokdae (장독대), an outside space to allow fermentation to take place. The jars containing these yummy kimchi are called Hangari (항아리), a traditional Korean earthenware jar used for preserving pickled foods, kimchi and more. It has a dual effect of protecting the food within and allowing air circulation at the same time.

It is also said that Kkakdugi made in mid to late autumn (October to December) tastes the best as it is the Korean traditional radish harvest season. Korean radishes picked during this time are firmer and have the most natural sweet taste.

Radish Kimchi is Jungmin's childhood favourite thanks to its crunchy texture and subtle sweet note to it, as compared to regular napa cabbage kimchi! Reminiscing about her mother's homemade kimchi back in Korea makes her crave for it even more now! 

The processing of fermenting and making radish kimchi is downright difficult even though it can be found easily at Korean restaurants as a side dish, which makes everyone including Jungmin appreciate this dish even more.
